Is Pani Puri Junk Food? The Chutney Was Always Medicine

Sanjana laughed and showed me her phone.

"My nutritionist banned pani puri. Pure junk, she says."

I asked her one thing.

Pani puri was never junk.

The chutneys are chatpata. Sweet, sour, lightly spiced. Those tastes were chosen to wake a sluggish gut in summer heat. The same spices that make rasam, the South Indian answer to weak digestion.

Medicine, disguised as a snack.

So what broke it?

Chillies reached India in the 1500s. We loaded raw chilli into the water, then dumped in ice to kill the burn.

Raw heat and ice arriving together. Your digestive fire cannot decide whether to rise or shut down.

That confusion is the acidity you blame on the food.

The snack did not betray you. The ice water did.

Life, strength, health and complexion all rest on agni.

Steady fire turns food into you. Confused fire turns it into ama.

Order it light on chilli. Skip the ice water. Notice how differently it sits.

Most foods we call junk are not junk. They are traditional foods with a modern addition nobody accounted for.
